"Pivovar U Tří růží," or "Brewery at the Three Roses," is a historic brewery located in the heart heart of Prague, the capital of the Czech Republic. Its name originated from the house sign "U Tří růží," or "At the Three Roses," which was first mentioned in the 15th century. The brewery was established in 2011, on the site of a former medieval malt house, and quickly became an integral part of the Prague beer scene. The concept of Pivovar U Tří růží is to present a unique blend of historic brewing traditions with modern brewing trends. Here, both classic Czech lager and a variety of top-fermented beers are produced. The exterior of the brewery is reminiscent of a medieval tavern, with its stuccoed facade, wooden doors, and intricate ironwork. The signage is in traditional Czech script, contributing to its old-world charm. The interior, on the other hand, is a fascinating blend of the past and the present. The brew house, visible from the restaurant, features shiny modern brewing equipment, while the seating area is full of rustic wooden furniture, harkening back to the building's historic roots. One of the most interesting facts about Pivovar U Tří růží is that it brews its beers directly in front of its patrons. This open-concept brewing allows visitors to witness the brewing process, making it a unique and interactive experience. The brewery offers six types of beers, which range from light to dark and from traditional to unconventional, ensuring that there is something for every beer lover. In addition to its beer, Pivovar U Tří růží also offers a menu of traditional Czech cuisine, with dishes designed to complement the various beers. This includes goulash, sausages, and pickled cheese - all classic Czech dishes that perfectly pair with the brewery's range of beers.
